Ingredients

  • Sift the following and stir into the above:
  • 4 eggs
  • 15 oz. can pumpkin OR 1 1/2 to 2 c. fresh, cooked, blended pumpkin
  • 2 c. sugar
  • 1 c. salad oil
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • CREAM CHEESE FROSTING:
  • 1 (6 oz.) pkg. cream cheese
  • 3/4 stick butter
  • 4 c. powdered sugar
  • 1 tbsp. milk
  • 1 tsp. vanilla

Preparation

Step 1

Mix the following ingredients in large bowl:
4 eggs
15 oz. can pumpkin OR 1 1/2 to 2 c. fresh, cooked, blended pumpkin
2 c. sugar
1 c. salad oil

Sift the following and stir into the above:
2 c. flour
2 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. ginger
Mix well and pour into greased and floured 9 x 13 pan for cake, 12 x 18 pan for bars. Bake at 350 degrees for 25 to 35 minutes.
