Ingredients
- 12 oz. whole-wheat penne pasta
- 1 lb. diced tomatoes (about 2 cups)
- 3 c. arugula, cut into strips
- 1/2 c. fresh basil, cut into strips
- 2 tbl. olive oil
- 1 tbl. balsamic vinegar
- 1/2 tsp. minced garlic
- 1/2 tsp salt
- 1 c. fresh Parmesan, shaved

Preparation
Step 1
Cook pasta according to directions on box; drain.
Combine tomatoes, arugula, basil, oil, vinegar, garlic and salt.
Add cooked pasta to bowl; toss and top with cheese shavings.
