  • 2 Tbsp sliced almonds
  • 6 oz orzo (aboout one cup)
  • 2 Tbsp olive oil
  • 3 cloves garlic chopped
  • 1/8 tsp group red pepper
  • 1 pound asparagus cooked and cut diagnoally
  • 3/4 tsp salt
  • 1 Tbsp + 1 tsp lemon zest (2 lemons)
  • 1 Tbsp lemon juice
  • 1/4 c frated Parmesan cheese
  • 2 Tbsp dried cranberries

Step 1

Toast almonds. in a 350 degree oven for 5-10 minutes. Prepare orzo. Heat oil and add garic and red pepper aboout 3 minutes. Add asparagus and heat about 2 minutes. Stir in orzo and salt and toss. Remove from heat and add lemon zest, lemon juice, Parmesan cheese and cranberreis. Season with salt and pepper. Serve hot or at room temperature. Top with toasted almonds.
