Shrimp with Garlic & Cayenne (Janis)

Ingredients
- ½ cup extra virgin olive oil
- 8 cloves garlic, peeled (4 crushed and 4 minced)
- 1 slice French bread, ¾” thick x 3’’ diameter
- 1 sprig fresh parsley, minced
- 1 cup sliced, blanched almonds, toasted
- 2 cups fish stock or clam juice
- 1 bay leaf
- ½ tsp. cayenne
- 1 # large shrimp

Step 1
Heat oil on medium heat, add crushed garlic, cook 10 minutes on low heat. Remove garlic and discard. Increase heat to medium, add bread and fry until brown – approx. 2 minutes per side. Drain bread and crumble. Put in food processor, add minced garlic, parsley, almonds and 3Tbs. clam juice. Process to pesto. Pour remaining clam juice into oil, add bay leaf, cayenne & salt & pepper. Simmer 10 minutes. Stir in bread paste, mix well, add shrimp and simmer until pink.
Serve with small, thinly sliced French bread.
