Carrot Casserole

  • 2 lbs baby carrots
  • 1/2 cup carrot juice
  • 1 cup mayonnaise
  • 1 teaspoon horseradish
  • 4 tablespoons grated onion
  • 1 cup seasoned bread crumbs
  • 4 tablespoons melted butter



Step 1

Place carrots in saucepan. Bring to boil. Cook carrots for 10 minutes - no longer. Reserve water from carrots. Place carrots in buttered casserole. Mix together mayo, horseradish, onion, and 1/2 cup of the reserved carrot water. Pour over carrots in casserole.

Mix bread crumbs and butter together. Sprinkle on top of carrots.

Bake at 350 degrees for at least 30 minutes, maybe longer depending on how done you like the carrots.
