Baked Apples with Pecans and Raisins

Ingredients
- 6 sweet-tart apples (Granny Smith)
- 1/2 cups raisins
- 1/3 cup brown sugar
- 1/4 cup copped pecans
- 1/4 cup chopped dried apricots
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 3 Tbs. unsalted butter, cut in small pieces
- 1 1/2 cups apple cider or juice

Step 1
Preheat oven to 350 degrees.
Core apples, taking care not to pierce the bottoms. Mix raisins, brown sugar, pecans, dried apricots, cinnamon, and nutmeg in mixing bowl. Stuff each apple with the mixture. Dot tops with butter. Place apples in baking dish. Pour cider/juice around them.
Bake 30 to 40 minutes, basting every 10 minutes or so, or until tender. Serve warm or at room temperature.
