30 Minute Roasted Chicken & Potatoes

Ingredients
- Vegetable cooking spray
- 1 1/2 lb. sm. potatoes, cut into quarters
- 4 cloves garlic, minced
- 1 tbsp. dried rosemary, crumbled
- 4 (6 oz.) boneless chicken breast halves with skin
- 1/2 tsp. salt
- 1/2 tsp. pepper

Step 1
Preheat oven to 475 degrees. Spray 10 1/2 x 15 1/2 inch pan with vegetable spray. Place potatoes in single layer on pan; spray potatoes with vegetable spray. Roast potatoes 15 minutes.
Meanwhile, in small bowl mix garlic and rosemary. Pull skin away from chicken. Spread small amount of garlic/rosemary mixture under skin. Toss small amount of garlic/rosemary mixture with potatoes. Place chicken in pan with potatoes. Spray chicken and potatoes if needed with vegetable spray. Season with salt and pepper. Roast about 15 more minutes until chicken is done and potatoes are tender. 4 servings.
