Ingredients

  • 2 tbsp (25 mL) extra-virgin olive_oil
  • 1 tbsp (15 mL) apple_cider_vinegar
  • 2 tsp (10 mL) Dijon_mustard
  • 1/4 tsp (1 mL) paprika
  • Pinch each salt, pepper and sugar
  • 4 cups (1 L) baby spinach
  • 1 cup (250 mL) thinly sliced mushrooms
  • 4 slices bacon, cooked and chopped
  • 1/4 small red onion, thinly sliced
  • 1/4 cup (50 mL) sunflower seeds (if desired)
  • 2 hard-cooked_eggs, quartered

Preparation

Step 1

In large bowl, whisk together olive oil, vinegar, Dijon mustard, paprika, salt, pepper and sugar. Add spinach, mushrooms, bacon, onion and sunflower seeds (if desired); toss to coat. Garnish with eggs.
