Strawberry & Spinach Salad

This salad is absolutely stunning and has a gourmet feel about it, making it perfect for dinner parties. Plus nothing beats fresh strawberries when they're in season.

Ingredients
- Balsamic-Dijon Vinaigrette (or fresh lemon juice):
- 2 tsp Dijon mustard
- 1 tsp balsamic vinegar
- 1 tsp red wine vinegar
- 1 Tbs water
- Maple or agave drops to taste
- Whisk all ingredients together. Makes 1 serving.
- For Salad:
- 2 cups baby spinach
- 1 cup sliced strawberries
- 2 to 3 hearts of palm, sliced
- 1/4 cup canned white beans or chickpeas, or cubed tofu
- 1 tbsp chopped pecans or walnuts (optional)

Preparation
Step 1
1. Prepare dressing and set aside
2. Plate spinach, then add remaining ingredients
3. Drizzle dressing generously over the the top and serve
