This salad is absolutely stunning and has a gourmet feel about it, making it perfect for dinner parties. Plus nothing beats fresh strawberries when they're in season.

Ingredients

  • Balsamic-Dijon Vinaigrette (or fresh lemon juice):
  • 2 tsp Dijon mustard
  • 1 tsp balsamic vinegar
  • 1 tsp red wine vinegar
  • 1 Tbs water
  • Maple or agave drops to taste
  • Whisk all ingredients together. Makes 1 serving.
  • For Salad:
  • 2 cups baby spinach
  • 1 cup sliced strawberries
  • 2 to 3 hearts of palm, sliced
  • 1/4 cup canned white beans or chickpeas, or cubed tofu
  • 1 tbsp chopped pecans or walnuts (optional)

Step 1

1. Prepare dressing and set aside

2. Plate spinach, then add remaining ingredients

3. Drizzle dressing generously over the the top and serve
