Pork Tenderloin Smothered in Onion & Mustard

Ingredients
- 2 12oz pork tenderloins, cut into 2" lengths & pounded 1" thick
- Salt & pepper
- 1 t flour + more for dusting
- 2 T butter
- 2 T olive oil
- 1 large thinly sliced onion
- 1 T Dijon mustard
- 1 C chicken broth
- 1 T chopped fresh dill

Preparation
Step 1
Season pork with salt & pepper & dust with flour. In deep skillet, melt butter with olive oil. Add pork & cook over hi heat, turning once, til lightly browned, @ 3 min. Transfer pork to plate
Add onion to skillet,a cover & cook over mod heat, stirring occasionally, til softened, @ 10 min. Stir in mustard & 1 t flour & cook for 1 min. Add chicken broth & bring to boil. Nestle pork in onion sauce. Cover & simmer over mod heat til pork is cooked thru, @ 8 min. Transfer pork to serving dish. Stir chopped dill into sauce & spoon over pork
