Cilantro-Lime Mayonnaise

This zippy mayonnaise isn't just for sandwiches. Thin it out with a little water and drizzle it over fish tacos, or smear it over salmon before you grill it. Whisk in some buttermilk and you have a refreshing spin on ranch dressing.

Ingredients
- 1 cup mayonnaise
- Finely grated zest of 2 limes
- Juice of 1/2 lime
- 1 cup roughly chopped cilantro (stems included)
- 1 small clove garlic, smashed
- 1/2 teaspoon granulated sugar

Preparation
Step 1
Combine all ingredients in a food processor (a small one, if you have it) and process until all of the ingredients are well blended, about a minute. Refrigerate, covered, for up to two weeks.
