Ingredients

  • 3/4 lb butter or margarine
  • 2 eggs
  • 1 c white sugar
  • 3 c flour
  • 2 tsp baking powder
  • 1 lb seeded raisins
  • 8 oz citron peel or glazed fruit
  • 1/4 lb glazed cherries
  • 1 can crushed pineapple,do not drain
  • 1 coconut

Preparation

Step 1

Mix the butter with the sugar till light
Add the eggs
Add the baking powder to the flour
Make sure the the cherries,raisins and peel are covered with the flour
Add the floured fruit to the batter and mix well
Cook at 275 for 2 hr
It makes one large fruit cake but you could also use loaf pans
