Ingredients

  • 4 eggs
  • 1/4 cup butter, softened
  • 1 cup granulated sugar
  • 1/4 cup gluten-free all-purpose flour
  • 1/4 teaspoon baking powder
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup flaked coconut

Preparation

Step 1

Preheat oven to 350 F. Grease a 10-inch pie pan or baking dish.

Combine all ingredients in a blender jar. Blend until smooth. Pour into pan. Bake 1 hour. Let cool before serving.
