Chicken with Asparagus

Ingredients

  • 3 lb chicken parts or chicken breasts(bone in)
  • 2 chopped onions
  • 1 chopped green pepper
  • 2 cans asparagus tips (drained)
  • 1 c milk
  • 1 tsp Tabasco
  • 2 Tbsp sherry
  • 2 Tbsp brandy

Preparation

Step 1

Steam chicken in 2 cups of water with salt and pepper to taste
When chicken is tender remove meat from bones
Return bones to stock and simmer for another 1/2 hour
Cook onions and pepper in 4 Tbsp of butter until onions are transparent
Add 2-3 Tbsp flour and mix well
Add chicken stock and milk and sir until thickened
Add liquid from 1 can of asparagus,tabasco,sherry and brandy to the sauce
Place chicken in greased casserole and arrange asparagus on top
Pour sauce over all
Top with grated cheddar cheese
Bake until brown and bubbly in 350 F oven (about 45 min)
