CREAMY GARLIC SOUP

Ingredients
- 6 Tbs (3/4 stick) unsalted butter, melted
- 1 cup onions, chopped
- 1/2 cup garlic cloves, chopped (about 3 medium cloves)
- 1/2 cup all-purpose flour
- 6 cups beef broth
- 1 cup dry vermouth
- 1/2 cup sour cream, room temperature
- 1/8 tsp grated nutmeg
- Croutons and fresh chives

Step 1
Melt butter in heavy, large saucepan over low heat. Add onions and garlic and cook until onions are soft, stirring occasionally, about 10 minutes. Add flour and stir 10 minutes. Whisk in broth a little at a time. Increase heat to high and bring to a boil. Reduce heat to medium-low and; add vermouth and simmer 25 minutes.
Puree soup in batches in blender. Return to saucepan and place over low heat. Whisk a little soup into sour cream in a small bowl. Whisk sour cream slowly back into the soup; do not boil. Remove from heat. Blend in nutmeg. Ladle into bowls. Garnish with cruoutons and chives, serve.
