  • 2 to 2 1/4 cups bread flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup plus 2 tablespoons warm water
  • 1 envelope yeast
  • Marinara sauce, to taste
  • Toppings, as desired

Step 1

Blend yeast with warm water and 1 tablespoons of flour. Let stand for 5 minutes. Add yeast mixture to food processor while running. Add olive oil and salt and additional flour until dough pulls away from the side of the bowl and forms a ball.

Remove dough and place on floured surface. Knead dough for several minutes, adding flour if is sticky. Place dough in bowl and cover with plastic wrap and set aside to rise in a warm, draft-free spot for 2 hours.

Punch down the dough and allow to rest for 4 hours.

Use dough immediately or refrigerate for use the following day. (Let dough return to room temperature before rolling).

Preheat oven and oven-stone on lowest rack to 500°F for 1 hour. Roll out dough to 9 inch circle.

Sprinkle cornmeal on pizza peel just where the pizza will lie. Top pizza and slide dough on to oven-stone. Bake for 10 to 14 minutes.

Remove pizza from oven and place on cooling rack. Brush crust with olive oil and spinkle Romano cheese or garlic salt if desired.
