CHEESY SCALLOPED POTATOES

Ingredients

  • 5 large potatoes, peeled and thinly sliced
  • 3 tbsp flour
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/4 cups reduced fat cheese, divided
  • 3 oz. Swiss cheese, divided
  • 2 medium onions, chopped
  • 1 1/2 cups skim milk
  • 2 tbsp minced fresh parsley

Preparation

Step 1

Place a third of the potatoes in a shallow 3-qt. baking dish coated with non-stick cooking spray. In a small bowl combine the flour, salt and pepper; sprinkle half over potatoes. Sprinkle with 1/4 cup of each of the cheeses and half of the onion. Repeat layers. Top with remaining potatoes. Pour milk over all.

Cover and bake at 350 degrees for 50 to 60 minutes or until potatoes are tender. Sprinkle with remaining cheeses. Bake, uncovered, 10 minutes longer or until cheese is melted. Sprinkle with parsley.
