Red Onion Marmalade

This marmalade is great on grilled meats or as an addition to a cheese tray.

Ingredients
- 1/3 C. Olive Oil
- 4 Lg. Red Onions, peeled & thinly sliced
- 1 Tbsp. Kosher Salt
- 3/4 C. Granulated Sugar
- 3/4 C. Ruby Port
- 3/4 C. Red Wine Vinegar
- 1 Tbsp. Fresh Thyme, chopped

Preparation
Step 1
In a pot over med. heat, warm olive oil & red onions. Cook for 7 min. or till very soft, stirring frequently. Add salt & sugar, & cook for 8 more min. Add port, vinegar, & thyme, then bring to a boil. Reduce heat to a simmer, & continue cooking for another 20 min. Cool slightly. *Store this marmalade in in airtight container.
