Baked Cauliflower Mash

  • 1 medium head of cauliflower or 1 16oz bag of frozen
  • 3 T. of cream cheese
  • 1/2 cup of shredded sharp cheddar cheese
  • 2 T. of heavy cream
  • 1/4 tsp. of xanthan gum
  • 1/2 cup of grated parmesan
  • 2 T. of butter
  • salt and pepper to taste

Step 1

Preheat oven to 375 degrees.In a pot of boiling water cook cauliflower until fork tender. Drain cauliflower well. In a food processor combine cauliflower, cream cheese, sharp cheddar , heavy cream and xanthan gum. Blend until smooth. Pour in a 9x9 casserole dish. In separate bowl combine parmesan cheese and butter with a fork until crumbles have formed. Spread on top of cauliflower mixture. Bake until top is golden brown about 15-20 min.
