Potato and Cauliflower Croquettes

Ingredients

  • 1/2 pound potatoes, peeled and chopped
  • 1/2 head of cauliflower, cut into florets
  • 1 tablespoon Wildtree Onion & Chive Blend
  • 2 whole eggs, one separated
  • 1 tablespoon Natural Grapeseed Oil
  • 1/2 cup parmesan cheese
  • 1/2 cup mozzarella cheese
  • 1/3 cup flour
  • 2/3 cup Panko
  • 1 tablespoon Wildtree Home Fries Seasoning

Preparation

Step 1

Preheat oven to 425°F. In a small pan, boil chopped potatoes until fork tender. Remove the potatoes from the water and add the cauliflower. Cook for 3-5 minutes until tender. Remove the cauliflower from the water and dice. Add the cauliflower and the potatoes to a bowl with the Onion & Chive Blend, 1 egg yolk, and cheese. Mash until the potatoes are smooth and studded with cauliflower. In three separate bowls, place the Panko, remaining egg and egg white, and the flour mixed with Home Fries Seasoning. Roll the potatoes into egg shapes and dip in the flour, egg, and Panko and place on a lightly greased sheet pan. Bake for 10-12 minutes, flip and cook 10 minutes more until the outside is browned and the inside is hot and soft. Serve with Garlic Galore Aioli (1/2 cup mayonnaise and 1 tablespoon Garlic Galore Blend) as a snack or as a side to your favorite dish.
