Ingredients

  • 2 lbs summer or zuchinni squash
  • 1/4 cup chopped onions
  • 1 cup cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded raw carrots
  • 1 9 oz pkg seasoned bread crumbs or Ritz or seasoned bread stuffing

Preparation

Step 1

1) Cook squash and onions in boiling salted water for five minutes. Drain.
2) Combine soup, sour cream and carrots.
3) Fold in squash and onions.
4) Combine stuffing mix and butter.
5) Spread half of stuffing in bottom of shallow 10X10 inch dish.
6) Spread vegetable mix on top.
7) Cover with remaining stuffing mix.
8) Bake at preheated 350 degrees for 30 minutes.
