Cheesy Hasselback New Potatoes

A favorite side dish of cheesy-potato deliciousness! With only about 5 minutes of hands on time and 55 minutes of cook time you'll be snacking soon enough!
Ingredients
- 12 new potatoes
- 2 tablespoons butter
- 1 (5.2-ounce) package Boursin cheese with garlic and herb
- 2 tablespoons bread crumbs
- 2 tablespoons Parmesan
- 1 tablespoon melted butter
- 1 teaspoon chopped rosemary
- Lemon zest

Step 1
Slice each potato at 1/8-inch intervals, cutting to but not through the other side. Arrange, cut sides up, on a greased baking pan. Brush with butter. Cover with foil. Bake at 400°F for 45 minutes.
In a small bowl microwave cheese on 50% power for 20 seconds. Place in a plastic bag and snip one corner. Combine bread crumbs, Parmesan, melted butter and rosemary. Uncover potatoes, cool slightly. Using butter knife, pry open layers; pipe cheese between. Sprinkle with bread crumb mixture. Bake 10 to 15 minutes more. Sprinkle with lemon zest.
