Ingredients

  • 2 Onions
  • Oil
  • 8 med potatoes or 12C instant mashed potatoes ( leave out margarine)
  • 8 eggs
  • 1 C flour ( potato starch)
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/2 C oil

Preparation

Step 1

Carmelized onions

Sauté onions in 1/4 C oil on low flame for 20-30 minutes. You can sauté them ahead of time.

Knishes:
1. Preheat oven to 400

2. Break up potatoes first with masher or spoon.

2. In lge bowl, combine the camelized onions, cooked potatoes, oil, eggs, potato starch/flour, eggs, salt, pepper

4. Use electric mixer to mix all ingredients. A few lumps are fine. Do not over mix.

5. Grease cupcake pans well. Add oil to bottom.

6. Bake at 400 for 26-28 minutes, until tops are golden brown.

7. Serve hot.

8. They freeze well.
