Pumpkin Cream Cheese Crumb Cake

Ingredients
- Crumb topping
- 6 tbsp. butter softened
- 1 \3 c flour
- 1 \2 c brown sugar
- 1 \2 c rolled oats
- 1 tsp. cinnamon
- Cake
- 1 3\4 c flour
- 1 tsp. baking soda
- 1 \2 tsp. baking powder
- 1 \4 tsp. salt
- 1 tbsp. pumpkin pie spice
- 1 \2 c butter (1 stick)
- 1 1\2 c sugar
- 3 eggs
- 1 c pumpkin pure
- 1 \2 c applesauce
- Cream Cheese filling
- 1 8 oz cream cheese
- 1 \4 c sugar
- 1 egg
- 1 \2 tsp. vanilla

Preparation
Step 1
In medium bowl combine 6 tbsp. butter, 1\3 c flour, brown sugar, rolled oats & 1 tsp. cinnamon
set aside
Whisk together 1 3\4 c flour, baking soda, baking powder, salt & pumpkin pie spice
Cream 1\2 c butter with , add 3 eggs one at a time until blended add pumpkin puree & applesauce
& mix just until combined
Add flour mixture in 3 parts mixing until combined
Beat cream cheese & 1\4 c sugar until smooth & crrsmy , add 1 egg & vanilla until combined
Preheat oven to 350 degrees
Spread 1\2 half of the pumpkin cake mixture in pan
Carefully spread the cream cheesenmixture over the cake mixture
Now add the rest of the cake mixture strafing carefully
Some may bleed through
Do not over work or the pumpkin cake will swallow the cream cheese
Sprinkle with the crumb topping & bake for 50 minutes
Allow to cool for 20 minutes before cutting
