Ingredients

    chicken thighs

  • 2

    onions, quartered

  • 1

    lemon, sliced

  • 6

    garlic cloves, peeled

  • 4

    tablespoons olive oil

  • 1/2

    cup dry white wine

  • 1 1/2

    cups chicken stock

  • Oregano sprigs

  • Salt and pepper, to taste

Directions

Preheat the oven to 350ºF. While it’s preheating, prepare your onion, garlic, and lemon. Place the chicken thighs, onion, lemon slices, garlic, oregano, and olive oil in a large bowl, salt and pepper to taste, toss to combine, then transfer to a baking dish or cast-iron pan. Pour the wine and stock into the baking dish and roast for 1 to 2 hours, or until the chicken is golden and cooked through. Serve.
