Roasted Garlic Chicken with Oregano, Lemon & White Wine

Love the ease at which this roasted chicken recipe comes together. The spices, lemon and white wine adds a wonderful flavor the whole family loves.
Ingredients
- 8 chicken thighs
- 2 onions, quartered
- 1 lemon, sliced
- 6 garlic cloves, peeled
- 4 tablespoons olive oil
- 1/2 cup dry white wine
- 1 1/2 cups chicken stock
- Oregano sprigs
- Salt and pepper, to taste

Preparation
Step 1
Preheat the oven to 350ºF.
While it’s preheating, prepare your onion, garlic, and lemon.
Place the chicken thighs, onion, lemon slices, garlic, oregano, and olive oil in a large bowl, salt and pepper to taste, toss to combine, then transfer to a baking dish or cast-iron pan.
Pour the wine and stock into the baking dish and roast for 1 to 2 hours, or until the chicken is golden and cooked through. Serve.
