Ingredients
- 3/4 cups sugar
- 3 Tbsp. flour
- dash salt
- 1 egg + 3 egg yolks
- 3 egg whites
- 2 cups milk
- 1/2 tsp. vanilla
- Nabisco wafers
- 5-6 medium size bananas sliced

Preparation
Step 1
Preheat over 425 degrees
Combine 1/2 cup sugar with flour and salt in double boiler. Beat egg + yolks and stir in milk. Add to sugar/flour mixture. Using a whisk, stir to ensure all is mixed well together. Over medium heat, continue to stir until pudding thickens.
Using a glass oven-proof casserole dish, line bottom of dish with wafers, then bananas, then pudding. Repeat until you end with pudding at the top of the casserole dish.
Beat egg whites until soft peaks (not dry). Add the remaining sugar (1/4 cup) to beaten egg whites. Spread on top if pudding. Bake for 5 minutes or until meringue is light brown. Serve chilled.
