Ingredients
- 1/2 cup soft fresh bread crumbs
- 1 large egg
- 5 About 5 Tbsp. mayonnaise
- 2 scallions ; remove white bulbs, trim green
- 1 Tbsp. chopped fresh parsley
- 1 tsp. dry mustard
- 1/2 tsp salt
- 1/4 tsp. pepper
- 1 1lb. jumbo lump crab meat; picked over to remove cartilage and rinsed well
- 1 Tbsp. butter + 1 Tbsp. oil for frying

Preparation
Step 1
In medium size bowl, mix bread crumbs, egg, 4 Tbsp. mayonnaise, finely chopped scallons, parsley and seasoning. Add crab meat and mix gently.
Shape into 6 patties.
Heat butter and oil in large skillet over medium heat. When oil is hot, add crab cakes until golden brown; about 5 minutes per side.
