Ingredients

  • 1/2 cup soft fresh bread crumbs
  • 1 large egg
  • 5 About 5 Tbsp. mayonnaise
  • 2 scallions ; remove white bulbs, trim green
  • 1 Tbsp. chopped fresh parsley
  • 1 tsp. dry mustard
  • 1/2 tsp salt
  • 1/4 tsp. pepper
  • 1 1lb. jumbo lump crab meat; picked over to remove cartilage and rinsed well
  • 1 Tbsp. butter + 1 Tbsp. oil for frying

Preparation

Step 1

In medium size bowl, mix bread crumbs, egg, 4 Tbsp. mayonnaise, finely chopped scallons, parsley and seasoning. Add crab meat and mix gently.
Shape into 6 patties.
Heat butter and oil in large skillet over medium heat. When oil is hot, add crab cakes until golden brown; about 5 minutes per side.
