Crawfish Dip

A twist on a traditional shrimp or crab dip, this dip highlights the lovely crawfish with it's delicate flavors. Serve with crostini, bread or crackers.

Ingredients
- 6 tablespoons butter
- 1 bunch green onions, sliced, about 3/4 cup
- 1 small green bell pepper, diced
- 1 (12-ounce) package frozen cooked, peeled crawfish tails, thawed & drained
- 2 garlic cloves, minced
- 1 (8 -ounce) package soft cream cheese
- 2 tablespoons Creole Seasoning
- 1 (4-ounce) jar diced pimientos, drained
- 1/4 to 1/2 cup of shredded Gruyere cheese
- Greens onions and parsley for garnish

Step 1
Melt butter in a small saucepan. Add bell pepper and green onions and cook until pepper is tender. Stir in remaining ingredients except cream cheese and cook about 10 minutes. Reduce heat to low and stir in cream cheese and Gruyere cheese.
