Passover Onion mushroom pudding

Ingredients
- 7 tbsp peanut oil, divided
- 2 onions chopped
- 1/2 cup chopped celery
- 1 cup sliced mushrooms
- salt
- 1/4 tsp pepper
- 3 cups matzo farfel
- 1/2 cup chopped parsley
- 3 eggs
- 2 cups chicken broth

Preparation
Step 1
Preheat oven to 350. Heat 4 tbsp oil. Saute onions, celery and mushrooms until golden. Add salt and pepper. Add farfel to the veggies & brown lightly stirring with a fork.
Add parsley, stirring to mix well. Beat the eggs and add chicken broth. Mix well and add to farfel mixture. With remaining oil, grease a baking pan. Place pan in oven and allow to get hot. Place farfel mixture into hot pan and spread evenly. Bake 40 -45 minutes. Allow to cool. cut into squares
