Orange-Ginger Couscous

Ingredients

  • 1

    tsp grated orange rind

  • 2

    cups fresh orange juice

  • cup sweetened dried cranberries

  • ½

    Tbsp butter or margarine

  • ½

    tsp salt

  • ¼

    tsp ground cinnamon

  • 1

    tsp minced fresh ginger

  • 1

    x 10-ounce pkg couscous

  • ¼

    cup sliced almonds, toasted

Directions

1. Bring 1st 7 ingredients to a boil in a saucepan over medium heat. Remove from heat. 2. Stir in couscous. Cover and let stand 5 minutes. Fluff with fork and stir in almonds.
