Mediterranean Artichoke-Chicken Rice Salad

  • 2 (6 oz.) jars marinated artichoke hearts, undrained
  • 2 c uncooked Minute original rice
  • 2 c chopped cooked chicken
  • 1/2 c Kalamata olives, sliced
  • 1 bunch green onions, sliced
  • 1/2 c mayonnaise
  • 1/2 t dried oregano
  • 1/2 t lemon pepper



Step 1

Drain and coarsely chop artichokes, reserving the marinade
Cook rice. Stir in reserved marinade and cool
Combine artichoke, rice mixture, chicken, and remaining ingredients
Cover and chill 1-2 hours

Yield: 4 servings
