Roasted Garlic Cauliflower

Ingredients

  • 24 ounces cauliflower florets (about 5 cups)
  • 1/4 cup coconut oil, melted
  • 4 cloves garlic, minced
  • Freshly ground black pepper, to taste
  • 1/4 cup freshly grated Parmesan
  • 2 tbsp. chopped fresh parsley leaves

Preparation

Step 1

1. Preheat oven to 425 degrees F.
2. Lightly coat a baking sheet with nonstick spray.
3. Place cauliflower florets in a single layer onto the prepared baking sheet.
4. Add coconut oil and garlic; season with salt and pepper, to taste. Gently toss to combine.
5. Place into oven and bake for 12-14 minutes, or until tender and golden brown.
6. Serve immediately, sprinkled with Parmesan and parsley, if desired.
