Lemon Chicken

  • 6 boneless chicken breasts
  • 1 egg slightly beaten
  • 1 tablespoon water
  • 1/2 cup bread crumbs
  • 1/2 teas. salt
  • 1/4 teas. pepper
  • 1/8 teas. garlic powder
  • 1/4 cup flour
  • 2 tablespoons margarine
  • 2 tablespoons veg. oil
  • 2 tablespoons lemon juice
  • 2 tablespoons dry white wine or chicken broth



Step 1

Flatten chicken
Mix egg and water
Mix bread crumbs, salt, pepper and garlic powder
Coat chicken with flour
Dip in egg and coat with bread crumbs
Heat butter and oil
Cook chicken 8 to 10 minutes turning once, until no longer pink in center when cut.
Remove from skillet
Stir in lemon juice and wine into drippings. Heat to a boil.
Pour over chicken.
