Easy Lemon Chicken

Ingredients
- 4 tbsp salted butter, at room temperature
- 1 tbsp honey
- 1 tbsp chopped fresh rosemary
- 1 orange and/or lemon, zested and quartered
- 1 whole (6lb) roasting chicken

Step 1
1.) Heat oven to 350 degree F. In bowl, combine butter, honey, rosemary and 2 tsp. orange zest. Spread 1/2 butter-honey mixture under skin of chicken; season with salt and pepper, if desired.
2.) Place orange quarters in chicken cavity. Place chicken on rack set in roasting pan; tie legs together with kitchen twine.
3.) Roast 2 hrs., or until thermometer inserted in thigh, not touching bone, reads 180 degree F, basting occasionally with remaining butter-honey mixture. Let sit 10 min. Garnish with lemon slices, if desired.
