Smoked Turkey and Sweet Potato Soup

Ingredients
- 1 smoked turkey leg or thigh
- 3 sweet potatoes (2 lb)peeled and chopped
- 2 onions, chopped
- 1 rib celery, chopped
- 2 cloves garlic, minced
- 1 1/2 tsp Cajun seasoning
- 6 c water
- 1 tbsp cider vinegar

Step 1
Trim fat from turkey. In slow cooker, combine turkey, potatoes, onions, celery, garlic and seasoning; pour in water
Cover and cook on low for 6-8 hrs. Transfer turkey to cutting board, let cool slightly.
Transfer 3 cups of the soup to blender; puree until smooth. Return to slow cooker, stir in vinegar
Remove and discard skin, bones and fat from turkey. Shred or chop meat and return to soup.
