Roast Beef with Mushrooms and Vegs

Ingredients
- 1 tbsp. veg oil
- 1 Chuck roast (3 to 5lbs)
- 6 med potatoes, peeled and halved
- 1 bag baby carrots
- 1 med onion, quartered
- 1 can mushroom soup
- 1 can sliced mushrooms, drained
- 1 cup water or beef broth

Step 1
Brown roast on all sides in oil, drain excess fat. Place roast in slow cooker. Add potatoes, carrots and onions around roast. Combine soup, mushrooms and brothin med bowl and pour over roast. Cook on low 6 to 8 hours.
