Black Beans, Corn, and Yellow Rice

Ingredients
- 1 (8 oz.) package yellow rice mix (Zatarains)
- 1 1/4 cups water (or Chicken Broth in place of water)
- 2 tbsp. olive oil
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (15.25 ounce) can whole kernel corn, drained
- 2 tsp. lime juice
- 1 tsp. ground cumin

Preparation
Step 1
1. Bring rice, water and olive oil to boil in saucepan over high heat.
2. Reduce heat to medium-low, cover and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes.
3. Mix together beans, corn, lime juice and cumin in large bowl. Stir in cooked rice and serve.
