Tomato Pie

Ingredients
- 1 - 9 inch- pie shell
- 7 ripe tomatoes sliced. Place in a colander with a heavy plate on top to drain. Can do this overnight or as preparing recipe
- 1 sweet onion
- 3/4 cup mayonnaise
- 2/3 cup shredded 5 cheese blend
- ground black pepper to taste
- 2 tsp fresh basil
- 2 tsp fresh oregano
- OR Italian seasoning

Preparation
Step 1
Preheat oven to 350 degrees.
Bake the pastry shell for 8 to 10 minute or until browned. (poke a fork a few times in the bottom to keep from rising)
Slice the onion, very thin, FRY THEM in a little oil until they are soft.
Season onions with basil and oregano OR Italian Seasoning. Place the onions in the bottom of the pie shell. Add the sliced tomatoes and black pepper to taste.
In a medium bowl, combine shredded cheese and mayo. Spread the mixure evenly over tomatoes.
Bake at 350 degrees for 20-25 minutes or until golden brown. Once cooked garnish with fresh herbs.
