Ingredients

  • 4 (1/4 pound) halibut fillets
  • 1/4 cup fresh lemon juice
  • 4 tsp olive oil
  • 2 Tbsp plain dried breadcrumbs
  • 2 Tbp capers, drained
  • 1/4 tsp salt
  • Freshly ground pepper
  • 1/4 cup minced flat leaf parsley
  • 4 lemon wedges

Bake until flakey, about 15-20 minutes. Spoon any pan juice over fillets, then sprinkle with parsley. Serve at once with lemon wedges.
