Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup chopped pecans
- 1/4 cup sugar
- 6 tbsp butter
- Combine ingredients and press into bottom and sides of spring form pan. chill
- 1 1/2 cup ground fresh cranberries
- 1 cup sugar
- 2 egg whites
- 1 tbsp frozen orange juice, thawed
- 1 tsp vanilla
- 1/8 tsp salt
- 1 cup whipping cream
- Cranberry Glaze
- 1/2 cup sugar
- 1 tbsp cornstarch
- 3/4 cup fresh cranberries
- 2/3 cup water

Preparation
Step 1
Make crust.
In large mixing bowl combine cranberries and 1 cup sugar. Let stand 5 minutes. Add unbeaten egg whites, orange juice, vanilla and slat. Beat on low speed of electric mixer until frothy. Then beat at high speed 6-8 minutes or till stiff peaks form. (Tips stand straight)
In small mixer whip cream to soft peaks. Fold into cranberry mixture. Turn into crust. Freeze until firm.
To serve, remove torte from pan and put on serving plate. Spoon Cranberry Glaze in center.
Cranberry Glaze
In saucepan stir together sugar and cornstarch; stir in cranberries and water. Cook and stir till bubbly, stirring occasionally just till cranberries pop. Cool to room temperature. (DO NOT CHILL)
