Tomato Mac and Cheese with Italian Sausage

Ingredients

  • 1 * 1 box of penne pasta (454g)
  • 4 * 4 Italian sausages
  • 1/2 * 1/2 cup olive oil
  • 8 * 8 cloves garlic, chopped
  • 1 * 1 cup flour
  • 1 * 1 can chopped tomatoes (28oz)
  • 1 * 1 can of evaporated milk 357mL (or 1.5 cups cream)
  • 2 * 2 bay leaves
  • 1 * 1 tablespoon minced fresh thyme leaves (or dried, or basil or oregano)
  • * sprinkle or two of salt
  • 8 * 8 ounces or so of grated Fontina cheese
  • 8 * 8 ounces or so of grated Grana Padano Parmesan cheese

Preparation

Step 1

1. Preheat your oven to 350 F.
2. Cook the pasta in salted water until it is almost done but slightly undercooked. Brown the sausages and slice.
3. Using a sauce pot and the olive oil, sauté the garlic for a few minutes. Stir in the flour. Stir in the tomatoes and dairy. Add the herbs and bring to a simmer. Stir in the cheeses. Stir in the pasta and sausage. Pour the mixture into a casserole dish, bake for 30 minutes or so.
