Ingredients

  • 1 medium onion
  • 3 cloves garlic
  • 2 medium zucchini
  • 1 Tbsp oil
  • 2 cans chicken broth
  • 1 can tomato sauce
  • 4 celery tops with leaves
  • 1 Tbsp sugar
  • Salt to taste
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 4 bay leaves
  • 3/4 cup ditalini soupettes

Preparation

Step 1

Chop onion and garlic. Dice zucchini. Saute in 1 tablespoon of oil for 5 minutes, stirring. Add chicken broth just to cover zucchini. Simmer for 1/2 hour. Add remaining chicken broth, tomato sauce, celery, sugar, salt, basil, oregano, and bay leaves. Cook 45 minutes longer. Add cooked ditalini. Serve with grated cheese topping, if desired.
