  • 1 tablespoon sugar
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 4 pounds plum tomatoes, halved lengthwise (about 16 medium)

Preparation

Step 1

1. preheat oven to 200 degrees
2. combine sugar, olive oil, salt, basil, oregano, pepper and tomatoes in a large bowl, tossing gently to coat tomatoes. Arrange the tomatoes, cut sides up, on a baking sheet coated with cooking spray. Roast @ 200 degrees for 7 1/2 hours.
