Cake, Orange and Clove-Scented Phyllo

Ingredients

  • 1/3 cup granulated sugar 2 eggs
  • Zest of 1/2 orange
  • 1/3 cup orange juice
  • 1/3 cup extra virgin olive oil
  • 1/3 cup Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons semolina flour
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder
  • 4 ounces phyllo dough, cut in 1/2-inch squares
  • 3/4 cup Greek yogurt
  • 2 tablespoons honey

Step 1

1. Preheat the oven to 325°. Lightly brush a small pie dish with olive oil and set aside.
2. To prepare the cake, place the sugar and eggs in a large bowl and beat with an electric mixer
until pale yellow and thick.
3. Whisk in the orange zest, orange juice, olive oil, 1/3 cup yogurt and vanilla extract. Gently stir in the semolina, cloves, cinnamon and baking powder, and then stir in the phyllo pieces.
4. Pour the batter into the prepared pie dish and bake until light golden brown, 30 to 35 minutes.
5. Allow the cake to cool for about 15 minutes before serving.
6. While the cake is cooling, stir together the 3/4 cup Greek yogurt and honey. Place a dollop of the sweetened yogurt on top of each piece of warm cake and serve. 
