Ingredients

  • 1/2 cup graham cracker crumbs
  • 2 Tbsp butter, melted
  • 8 oz cream cheese, room temperature
  • 1/4 cup Greek yogurt
  • 1 (14-oz) can sweetened condensed milk
  • 1 Tbsp lime zest
  • 3/4 cup Key lime juice
  • 1 tsp vanilla extract
  • 10 (3-oz) paper drinking cups
  • 10 popsicle sticks

Preparation

Step 1

In a mixing bowl, stir together the graham cracker crumbs and the butter. Set aside.

In the bowl of a food processor with the blade attachment, place the cream cheese, yogurt, and sweetened condensed milk. Process until smooth, scraping the side once or twice. When the mixture is smooth, add the lime zest, lime juice, and vanilla extract. Process until smooth.

Divide the cream cheese filling between the drinking cups and place a popsicle stick in the middle of each. Divide the graham cracker mixture between the cups, gently pressing it around each popsicle stick, covering the surface of the cream cheese filling.

Put the finished popsicles on a baking sheet or in an 8" x 8" baking dish. Freeze for at least 6 hours or overnight. Once frozen, peel off the paper cup and enjoy!
