BEEF = Sun-dried Tomato Meat Loaf

Ingredients
- 1 1/4 cups sun-dried tomatoes (not packed in oil)
- 3 cups boiling water
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 2 tsp. olive oil
- 1/2 cup milk
- 1 egg, lightly beaten
- 1 cup soft bread crumbs
- 2 tsp. dried basil
- 1 tsp. dried oregano
- 1 tsp. each salt and pepper
- 1/2 tsp. dried thyme
- 1 1/2 lbs. ground beef
- 1/4 cup ketchup

Step 1
In a bowl, combine tomatoes and water. Let stand for 15 minutes. In a small skillet, saute the onion and green pepper in oil for 3 minutes or until tender. In a bowl combine the milk, egg and bread crumbs.
Drain and chop the tomatoes. Save 1/4 cup for topping. Add onion mixture, basil, oregano, salt, pepper, thyme and remaining 1 cup chopped tomatoes to the crumb mixture. Add beef and mix well. Shape into a loaf in ungreased 13 x 9 in. baking dish.
Combine ketchup and reserved tomatoes. Spread over loaf. Bake, uncovered, at 350 degrees for 55-60 minutes or until no pink remains and a thermometer reads 160 degrees. Drain, let stand for 10 minutes before slicing.
