Ingredients

  • lb medium shrimp peeled and deveined
  • 1 lemon, juiced
  • 1 1/2 c grits
  • 1 lb tasso ham, fine dice
  • 1 small onion, finely chopped
  • 1/4 c green bell pepper, finely chopped
  • 1 garlic clove, minced
  • 1/2 c scallions, thinly sliced
  • 2 tbsp all purpose flour
  • 1 c chicken stock
  • 2 tbsp butter
  • 1 c cheddar cheese, grated
  • 1 1/2 tsp salt
  • tabasco

Preparation

Step 1

Marinate shrimp in lemon juice and Tabasco. Make the grits in saucepan, bringing 6c of water and salt to a boil. Whisk in grits ½ c at a time. After all the grits are in, reduce to a very low simmer and cook over low heat for 35-40 minutes stirring frequently. When the grits are thick and creamy stir in butter and cheese. Cover and keep warm.
