Bacon & Egg Potato Salad

Ingredients

  • 6 c cubed red potatoes (about 2 1/2 lbs)
  • 4 hard cooked eggs, sliced
  • 1 sm onion, chopped
  • 4 bacon strips, cooked & crumbled
  • 1 T minced fresh parsley
  • 1 c mayo
  • 2 T dill pickle relish
  • 3-5 t prepared mustard
  • 1 T white vinegar
  • 1 T lemon juice
  • 1/2 t salt
  • 1/2 t celery seed
  • 1/2 t dill weed
  • 1/2 t pepper

Preparation

Step 1

Place potatoes in Dutch oven; cover with water. Bring to boil. Reduce heat; cover & cook 10-15 min until tender. Drain & cool.

Place potatoes in Lg bowl. Add eggs, onion, bacon & parsley. In sm bowl combine mayo, relish, mustard, vinegar, lemon juice & seasonings. Pour over potato mixture & toss gently to coat. Refrigerate until chilled.
